Bon voyage very berry scones


My friend and next door/desk neighbour leaves this week to move to Australia. So in an attempt to give her the best English farewell I decided to organise an English themes leaving party in which I made home - made bunting and scones. However as I don't usually eat biscuits/sugary snacks I decided to try making an alternative so I could provide goodies without guilt.

Ingredients include:
Cup of all purpose flour
1 tsp baking powder 
1 cup oats 
3 tsp of brown sugar 
Lots of Lemon zest

2 tsp honey
1 beaten egg white
Soya / almond milk 
3 tsp unsalted soya butter/ coconut oil 
Blueberries 

So firstly set your oven to 180 degrees so its ready. Then add the first 5 ingredients together and in a separate bowl first whisk the egg and then add the butter, honey and milk. 


Add the liquid mix slowly folding it into the dry mixture until it is moist. Make sure however it is not to sticky otherwise you'll end up with scone hands.

Once this is done add the blueberries. Once your happy with the mixture create round even oval shapes and place them in grease proof paper on a baking tray.


Let them bake for 12 minutes until golden brown. Sprinkle nuts or casting sugar if you'd like to add more finest.

And packed for work, few sneaky ones left for my housey mate. 

And too add to my tea party I plan I serve then with Creme fresh, organic strawberry jam and home made bunting!
